A straight Czech pilsner, five weeks lagered, with fresh curry leaf thrown at whirlpool. Crisp all the way through, then the leaf shows up at the end.

Bengali Lime · Black Salt

Gondhoraj zest, kala namak and cracked coriander. Tart and briny and gone in about four sips, which is roughly the point of a gose.

Raw Mango · Roasted Cumin

Kettle-soured for thirty-six hours, then raw mango pulp and roasted jeera. It is a Maharashtrian summer afternoon, carbonated.

04Hazy IPA

Custard Apple · Citra · Mosaic

Custard apple pulp pushed against a wall of American hops. Soft, tropical and faintly creamy; the fruit does the work the lactose usually does.

05Amber ale

Bhut Amber

Ghost Chilli · Caramel Malt

One Assam bhut jolokia per barrel over a caramel malt base. Warm rather than painful. We tested that ratio a great many times.

06Porter

Chai Porter

Assam CTC · Ginger · Elaichi

CTC and whole spice cold-steeped into a robust porter, never boiled. Kadak, as it is meant to be, with the tannin sitting exactly where the roast does.
