Navdhanya is the nine-grain offering: rice, wheat, millet, sorghum, maize, barley and the rest. We bake one loaf from each. Everything is levain-raised, nothing is shaped by machine, and the bread is made to sit next to the glass.

Forty per cent bajra in a long, cold levain. Dark crust, close nutty crumb, and it holds for four days instead of the usual one.
